Delicious Peanut Free Chicken Satay is now possible with Wowbutter
The aroma in the kitchen, the delight on the kids faces, the flavours that develop with a slow cook, even a mild curry... Yep - I'll admit: Over 6 years in a peanut-free household and life bound by the life-threatening anaphylaxis allergy to that little legume - a rich, thick creamy peanut chicken satay was not something I expected to ever grace my families table again.
Until.... WOW Butter hit the shelves of Woolworths in Broome! Having tried many (and I repeat many) nut substitutes over the years, I was sceptical. Nothing prepared me for that melt in your mouth moment that (I thought) only crunchy peanut butter can provide.... WOW! This stuff smells and tastes so similar to the real deal that people with a life threatening allergy still can't bring themselves to actually eat it.
Living in a nut free home and having a Wonderbag to transport safe food makes parties, camping and picnics much easier. Managing an anaphylaxis allergy is one of those 'leave nothing to chance and check every ingredient as if a life depended on it' kinda sitch every. Single. Day.
Portability of hot, safe, nutritious food has never been easier than with a Wonderbag. One kitchen, one pot, one Wonderbag (or 3) and we can go many places, with peace of mind.
Not sure if the person using the BBQ at the park before you cooked satay chicken for lunch?
Pre-cook your sausages and take them piping hot in a Wonderbag - you'll also relieve someone of BBQ duty so you can enjoy your time at the park instead of flipping sausages!
Wonderbags are an absolute game changer when living a life managing allergies. They're super versatile and also work in reverse to chill your food. When the local pool only has peanut-ridden Cornettos on offer, it means after the kids have slogged out 2 weeks of swimming lessons - we're able to bring ice-creams on an icepack in the Wonderbag and no one misses out.
Ingredients:
Method:
Gently fry the onion, garlic and capsicum in oil on your pot of choice for your Wonderbag.
Add the chicken and cook until brown
Add the WOW butter, soy sauce, Worcestershire sauce, curry powder, brown sugar and sweet chilli sauce.
Cover and simmer for 10 minutes.
Transfer piping hot pot immediately to Wonderbag and seal with the lid quickly.
You can leave your chicken cooking for 8 hours and keep it warm for up to 12 hours. If leaving for the day be sure to keep the thighs full prior to cooking so they don't dry out. If cooking for 4 hours simply dice your chicken prior.
Serve with amazing fluffy Wonderbag Rice - yes, your Wonderbag is also a non-electric Rice Cooker!!
Tip: Sometimes I'll add some coconut cream at the end just to really thicken it up and take the curry next level! For adults add fresh chilli and coriander for an extra hit.
You're welcome!
